Why do you use a beauty dish?

You once mentioned you used a large softbox up high and another beauty dish off to the side a bit.
Is there something special about this instead of another softbox?

If so, what size is recommended and at what power?
There are so many to choose from!

Yes, there is something special about this. :) Your main light, which would be the big softbox you are referring to, will create the soft overhead light that our eyes have evolutionarily evolved to be able to read very fast and with great ease. The spark, which is what you're calling the beauty dish, creates more of a 'pop-effect' and makes the colors shine a bit. So if you only have the soft light from above, your colors will be flat because of the angle of the light. But if you create a spark hitting the colors of the subject straight on, the angle going back will be very direct. This will create a great result where you'll get the quickly readable light from above and a colorful spark that will push back the colors. :)
